Jim Jim loves our Shiraz
grapes and so do we. Year after year these low cropping pets produce wines
which are deep in color, rich in texture and powerful on the palate. McLaren Vale is the home of consistently great Australian Shiraz and 2004 was one of those blue chip years where the balance of moisture and warmth matched the crop levels in our vineyard. We kept a watchful eye on Jim’s dietary behavior as we take this as one of the primary indicators of optimum ripeness in our Shiraz. Jim Jim didn’t disappoint once again. These grapes were well and truly “on song” for picking when he started to eat them on the 29th of March. It was therefore time to begin the harvest. This wine is just as friendly as Jim Jim. It displays all the character of a welcoming dog. A great nose and delightful sweet berry fruit flavor with soft tannins which makes it your best friend on the dining room table. JIM JIM 2006 Unoaked Chardonnay |

Jim Jim takes his
vineyard management duties very seriously particularly if it looks as if his
grape crop is going to be plundered by pests of the feathered kind. The
starlings swoop in on the white varieties first so Jim Jim is kept busy
protecting his Chardonnay early in the season. This wine is made from some of the earliest Chardonnay grapes planted in McLaren Vale. They are the rare OF clone so are relatively low yielding / high flavour grapes. It shows in the wine. We pick the grapes at around 22.5 brix to take advantage of the natural acidity in the grape. This ensures the wine has a freshness which makes it ideal for drinking with food. The grapes are hand harvested, under Jim Jim’s supervision, to protect the integrity of the juice and to maintain fruit delicacy. Jim Jim takes his

protecting his Viognier and Verdelho early in the season. This wine is a blend of two fascinating varieties Viognier (pronounced Vee-on-yea) and Verdelho (pronounced Ver-dell-oh). The Viognier is a French grape and the Verdelho is Portuguese, both are full of character. The Viognier has an orange blossom and stone fruit character. The Verdelho imparts tropical fruit and pear flavour to the wine. We pick both varieties at around 12.5 bè to take advantage of the natural acidity in the grape. This ensures the wine has a freshness which makes it ideal for drinking with food. The grapes are hand harvested to protect the integrity of the juice and to maintain fruit delicacy.
